Cajun Pork Roast.

For ideal results with this roast, test doneness with a meat thermometer. This will help take the guess work out of your cooking and ensure that the roast is tender and juicy. Serve with roasted new potatoes and orange and onion salad.

Cajun Pork Roast

2 pounds boneless single loin pork roast
3 tablespoons paprika
1/2 teaspoon red pepper (cayenne)
1 tablespoon garlic powder
2 teaspoons dried oregano
2 teaspoons dried thyme
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1/2 teaspoon ground cumin
1/4 teaspoon ground nutmeg
  1. Combine all seasonings and rub well over all surfaces of roast.
  2. Place roast in shallow pan and roast in 350°F (175°C). oven for about an hour, until internal temperature is 155°F to 160°F (approximately 65°C to 70° C).
  3. Remove from oven, let rest 5 to 10 minutes before slicing.
