This stovetop curry makes
the most of flavorful pork steaks. Serve with hot rice garnished
with chopped cilantro and cashews.
Curried
Pork Steaks
4 pork blade steaks, about
3/4 to 1 inch thick
1/2 teaspoon curry powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons vegetable oil
1/2 cup chopped onion
1/2 teaspoon turmeric
1/2 teaspoon ginger
1/2 teaspoon ground coriander
3/4 cup chicken broth
1 (5-ounce) package diced dried mixed fruit
1 teaspoon brown sugar
1 teaspoon cider vinegar
- Stir together curry powder,
salt and black pepper; season steaks with mixture.
- Heat oil in large nonstick
skillet over medium-high heat; brown chops, about 1 1/2 to 2
minutes on each side.
- Stir in onion, spices,
chicken broth and dried fruit. Bring to a boil, cover, lower
heat and simmer for 20 minutes.
- Uncover and stir in brown
sugar and vinegar, simmer uncovered 1 minute more.
