Pasta lovers will want to try this delicious
dish.
Penne
with Spinach, Peas and Bacon
- 1 (9-ounce) package frozen
creamed spinach
8 ounces uncooked penne
5 slices bacon, diced
1/2 cup chopped onions
1 cup frozen peas, thawed
1/2 cup whipping cream, or evaporated milk
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 cup (1 ounce) freshly grated Parmesan cheese
- Thaw creamed spinach in
microwave at MEDIUM (50% power) 6 to 7 minutes; set aside.
- Cook pasta according to
package directions. Drain and keep warm.
- Cook bacon in large saucepan
over medium heat, stirring often, until crisp. Remove bacon with
a slotted spoon, and drain. Reserve 1 tablespoon drippings in
saucepan.
- Add chopped onion to drippings,
and saute 3 to 4 minutes or until tender. Add peas, and saute
2 minutes. Reduce heat to low; add creamed spinach and next 3
ingredients. Bring to a boil, stirring often. Reduce heat, and
simmer, stirring constantly, 3 minutes. Add pasta; cook, stirring
constantly, until thoroughly heated. Remove from heat, and stir
in cheese and bacon.
