Pina Colada Pork Chops.

Not sure as to why this dish is called 'pina colada' chops, since the word 'pina' in the phrase 'pina colada' refers to pineapple. To make this a genuine 'pina colada dish', you can opt to serve fresh pineapple wedges alongside these tasty, tropical chops. Serve with rice pilaf and steamed sugar peas.

Pina Colada Pork Chops

4 boneless pork chops, 1 to 1 1/2-pounds
3 limes - divided use
1/2 cup canned coconut milk*
Salt and ground cayenne pepper
Chopped green onions for garnish
Chopped fresh cilantro for garnish
  1. Marinate the pork in juice of one lime while you prepare a medium-hot fire (5 to 8 minutes).
  2. Grill chops over indirect heat, about 4 to 5 minutes per side.
  3. Warm coconut milk over low heat; season with salt and a pinch of cayenne. Add juice of second lime to sauce.
  4. Transfer chops to platter when done. Spoon sauce over chops. Garnish with green onions and cilantro and sprinkle with juice from third lime.
  5. Serve with rice.

Serves 4.

*If coconut milk is unavailable, substitute 1/2 cup half-and-half mixed with 1/4 teaspoon imitation coconut extract.
