Barbecue Chicken Quesadillas.

Crisp-cooked quesadillas filled with chicken, cheese and green onions tossed with your favorite barbecue sauce. Serve with salsa, guacamole and sour cream.

Barbecue Chicken Quesadillas

2 cups cooked, diced chicken breast
1 cup barbecue sauce
3 cups (12 ounces) shredded queso quesadilla cheese
3/4 cup sliced green onions
1 tablespoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon granulated sugar
10 (9-inch) flour tortillas
2 cups salsa
2 cups guacamole
1 cup sour cream
20 cilantro sprigs
  1. Combine the chicken, barbecue sauce, cheese, green onions, and seasonings.
  2. Spread the chicken mixture over half of each tortilla, spreading to the edge. Fold the plain half over filling; press down firmly.
  3. Cook the filled tortillas in a dry skillet until crisp and lightly browned, turning once.
  4. For each portion, cut the quesadilla into six wedges. Place on a serving plate, with the points toward the center. Serve with salsa, guacamole, sour cream, and the cilantro sprigs.

Makes 10 servings.
