Chicken and Potato Taco Pie.

This is comfort food with a south-of-the-border twist. Serve with sliced melon sprinkled with fresh lime juice.

Chicken and Potato Taco Pie

2 cups prepared mashed potatoes
1 (1.25-ounce) package taco seasoning mix - divided use
1 tablespoon vegetable oil
1 pound ground chicken or turkey
1/2 cup chopped onion
1 small red bell pepper, seeded and chopped
1 (16-ounce) can refried beans
1/2 cup homestyle salsa
1/4 cup water
  1. Preheat oven to 350°F (175°C). Lightly grease 13x9x2-inch ovenproof baking dish.
  2. Combine potatoes and 2 tablespoons seasoning mix in medium bowl; spoon into prepared pie plate to form crust. Heat oil in medium skillet; add chicken, onion and bell pepper. Cook until chicken is cooked through and no longer pink. Stir in beans, salsa, water and remaining seasoning mix; cook until heated through. Pour into potato crust.
  3. Bake for 30 minutes; top with lettuce, cheese and olives, if desired.
