
Here's a quick and easy
chicken burrito filling that makes a satisfying busy-day meal.
Chicken
Burritos
- 1 tablespoon vegetable
oil
1 pound boneless, skinless chicken breast halves, cut into 2-inch
strips
1 1/4 cups water
1 (1.5-ounce) package taco seasoning mix
8 (10-inch) burrito-size flour tortillas, warmed

- Optional Toppings: Shredded
cheddar cheese, shredded lettuce, chopped green onions, sliced
olives and salsa
- Heat vegetable oil in
large skillet over medium-high heat. Add chicken; cook for 3
to 4 minutes or until no longer pink. Add water and seasoning
mix. Bring to a boil. Reduce heat to low; cook for 3 to 4 minutes
or until mixture thickens.
- Spoon chicken mixture
evenly over tortillas. Top with shredded cheddar cheese, shredded
lettuce, chopped green onions, sliced olives and salsa, if desired.
Fold into burritos.
Makes 8 servings.
