A deliciously easy recipe for tropical-style baked chicken breasts.

Easy Baked Hawaiian Chicken

1 (20-ounce) can crushed pineapple, undrained
1 tablespoon curry powder
1 teaspoon granulated sugar
3 tablespoons vegetable oil
6 to 8 (8-ounce) boneless, skinless chicken breast halves
1/2 cup sweetened flaked coconut
  1. Heat oven to 425°F (220°C).
  2. Pour pineapple with juice into a 13 x 9 x 2-inch baking dish. In a small bowl combine curry powder, sugar and oil.
  3. Brush curry mixture on both sides of chicken. Place chicken on top of pineapple, sprinkle with coconut.
  4. Bake, uncovered for 30 minutes or until chicken tests done when juice run clear.

Makes 6 to 8 servings.

Nutritional Information Per Serving (1/6 of recipe): 402.6 calories; 26% calories from fat; 12.1g total fat; 131.5mg cholesterol; 150.2mg sodium; 730.6mg potassium; 18.8g carbohydrates; 1.4g fiber; 14.4g sugar; 17.4g net carbs; 53.1g protein.
