Turkey tenderloin 'steaks' are precooked in a microwave and finished off on the grill, brushed with an easy glaze made with chopped jalapeno chiles, apricot jelly, butter and lime juice.

Jalapeño Glazed Turkey

2 pounds turkey tenderloin, cut into serving pieces
1/3 cup apricot jelly
3 jalapeño chiles, seeded and chopped (see note)
2 tablespoons butter or margarine
1 tablespoon lime juice

  1. In a microwave-safe dish, arrange cut-up turkey; cover with wax paper. Microwave on HIGH for 10 minutes, turning the turkey over halfway through cooking.
  2. In a microwave-safe cup, combine apricot jelly, finely chopped jalapenos, and butter Microwave on HIGH for 45 seconds; stir in lime juice.
  3. Grill the turkey, brushing with the jelly mixture, for 10 minutes or until meat thermometer inserted in thickest portion register 180°F to 185°F (approximately 85°C).
  4. Serve the turkey with the remaining jelly mixture.

Makes 4 servings.

Note: Because hot peppers contain oils that can burn your eyes, lips and skin, protect yourself when working working with peppers by covering one or both hands with plastic gloves or bags. Be sure to wash your hands thoroughly before touching your eyes or face.
