A simple dish of sautéed
turkey medallions sprinkled with fresh lemon juice and capers.

Medallions Piccata
- 1 pound turkey, thinly
sliced
Salt and pepper to taste
1 garlic clove, crushed
1 tablespoon olive oil
1 tablespoon butter or margarine
2 tablespoons fresh lemon juice
4 teaspoons capers
- Lightly sprinkle one side
of sliced turkey with salt and pepper.
- In a large, non-stick
skillet over medium-high heat, saute the turkey with the crushed
garlic in olive oil and butter for approximately 2 to 3 minutes
per side, or until golden and fully cooked. Remove the skillet
from the heat and sprinkle the lemon juice and capers over the
turkey.
Makes 4 servings.
