A tasty infusion of two
classic salad dressings in one.
Blue
Cheese Caesar Dressing
- 2 cloves garlic, peeled
and chopped
1 tablespoon Worcestershire sauce
2 tablespoons dijon mustard
2 tablespoons lemon juice
1 tablespoon red wine vinegar
2 anchovy fillets (optional)
Pinch of salt and freshly ground black pepper
1 cup vegetable oil
1 1/2 cups (8 ounces) crumbled Wisconsin Blue cheese (can substitute
Wisconsin Gorgonzola)
- Place garlic, Worcestershire
sauce, mustard, vinegar, lemon juice, and anchovy fillets in
a small food processor or blender and process on high for 1 minute.
Very slowly add oil to the mixture until smooth. Season with
salt and pepper and transfer to a small bowl. Fold in Blue cheese.
Makes about 2 1/2 cups.
