A lovely, composed fresh summer fruit salad of cantaloupe and honeydew slices fanned out alternately onto a serving plate with a scoop of cottage cheese, drizzled with a creamy orange-banana dressing and garnished with fresh juicy blueberries.

Burst of Summer Fruit Salad

3 tablespoons orange juice
1/2 cup (4 ounces) cream-style small curd cottage cheese
1/2 medium banana
1 medium cantaloupe, peeled, seeded, sliced
1 small honeydew, peeled, seeded, sliced
2 cups (15 ounces) cream-style small curd cottage cheese
1/2 cup blueberries
  1. Place juice, cheese, and banana in blender container. Cover and process on high until smooth. Chill several hours.
  2. For each salad, fan cantaloupe and honeydew slices on dinner plate, alternating slices. Place 1/2 cup cottage cheese at base of melon "fan". Drizzle banana mixture over melon and cottage cheese; sprinkle with blueberries.

Makes 4 servings.
