A lovely, composed fresh
summer fruit salad of cantaloupe and honeydew slices fanned out
alternately onto a serving plate with a scoop of cottage cheese,
drizzled with a creamy orange-banana dressing and garnished with
fresh juicy blueberries.
Burst
of Summer Fruit Salad
- 3 tablespoons orange juice
1/2 cup (4 ounces) cream-style small curd cottage cheese
1/2 medium banana
1 medium cantaloupe, peeled, seeded, sliced
1 small honeydew, peeled, seeded, sliced
2 cups (15 ounces) cream-style small curd cottage cheese
1/2 cup blueberries
- Place juice, cheese, and
banana in blender container. Cover and process on high until
smooth. Chill several hours.
- For each salad, fan cantaloupe
and honeydew slices on dinner plate, alternating slices. Place
1/2 cup cottage cheese at base of melon "fan". Drizzle
banana mixture over melon and cottage cheese; sprinkle with blueberries.
