
A simple shrimp and pasta
salad tossed with sliced green onions, coarsely chopped tomatoes,
crumbled feta cheese, creamy-style cottage cheese, crushed dried
oregano leaves and a generous amount of freshly ground black
pepper.
Feta
and Shrimp Salad
- 1 pound medium shrimp,
cooked and deveined
1 cup (4 ounces) crumbled Wisconsin Feta cheese
1 cup (7 1/2 ounces) cream-style Cottage Cheese
8 green onions, thinly sliced
2 tomatoes, cored and coarsely chopped
1 1/2 teaspoons dried oregano leaves, crushed
1 teaspoon freshly ground black pepper
- Salt to taste
8 ounces spaghetti, broken in half, cooked according to package
directions and drained
- Combine shrimp, feta and
cottage cheese, onions, tomatoes, oregano, black pepper and salt
in a large bowl. Mix well. Add pasta and toss. Serve immediately.
Makes 6 servings.
Note: For a flavorful variation,
substitute Peppercorn flavored Wisconsin Feta cheese.
