An easy, terrific tasting
bean and tuna salad, tossed in a lemony fresh ginger dressing.

Northerns and Tuna with Lemon and Ginger
- 2 (15-ounce) cans Great
Northern beans, rinsed, drained
1 (9 1/4-ounce) can water packed light tuna, drained
6 cups Romaine lettuce, torn
- Combine tuna and beans.
Add lettuce and dressing. Toss very gently. Garnish with lemon
slices. Serve immediately.
Makes 4 servings (about
2 cups each).
Lemon Ginger
Dressing
2 tablespoons fresh lemon
juice
1/2 teaspoon soy sauce
1 teaspoon fresh ginger, minced
2 teaspoon fresh garlic, minced
1/4 cup extra-virgin olive oil
Lemon slices (garnish)
- Prepare by combining lemon
juice, soy sauce, ginger and garlic. Whisk in olive oil. Set
aside.
