This recipe for Green Goddess Dressing
was extremely popular in the 1970s...and we're bringing back
as a time-honored classic!
Green
Goddess Dressing
- 1 avocado, peeled and
pitted
1 cup mayonnaise
2 tablespoons green onion
1 garlic clove
1 tablespoon lemon juice
1 teaspoon tarragon, fresh or dried
5 anchovies
Salt and pepper, to taste
- In a KitchenAid blender,
combine the avocado, mayonnaise, green onion, garlic, lemon juice,
tarragon, anchovies, salt and pepper. Process until smooth, adding
water if necessary.
- Chill for 24 hours before
serving.
Makes about 2 cups.
