Chicken Salad Sandwich with Havarti Cheese.

A delicious chicken salad recipe that certainly can be filed under "gourmet dishes perfect for a luncheon entrée". Recipe by Chef Michael Smith.

Chicken Salad Sandwich with Havarti Cheese

1/4 cup sour cream
1/2 cup mayonnaise
1 tablespoon lime juice
1/2 teaspoon red curry paste
1 teaspoon fresh basil, chopped
2 cups cooked chicken, diced
1/4 cup sweet onion, finely diced
1/2 cup green apple, diced
1/4 cup sliced almonds
Salt and pepper, to taste
6 croissants
6 leaves butter or Boston lettuce
4 ounces Wisconsin Havarti, sliced*
  1. In a medium bowl, whisk together sour cream, mayonnaise, lime juice, red curry paste and basil until well blended.
  2. Add chicken, onion, apple and almonds; season with salt and pepper; mix well. Refrigerate until ready to use.
  3. Split croissants. Place lettuce, chicken salad and Wisconsin Havarti cheese on the bottom half of croissant. Place second half on top.

Makes 6 servings.

*For a flavor twist, substitute Wisconsin Dill Havarti.
