A good basic recipe for
a no-frills, straight-up egg salad sandwich filling.
Classic
Egg Salad Sandwiches
- 6 large eggs
1/3 to 1/2 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 slices white bread
- In a saucepan with enough
water to cover boil eggs for 8 to 10 minutes. Rinse in cold water.
Peel off shell. Place eggs in a bowl and mash with a fork.
- Stir in mayonnaise, salt
and pepper to blend. Spread on bread to make sandwiches.
Makes 4 servings.
