Mediterranean Tuna Salad.

This colorful combination of tuna, artichokes and olives has universal appeal, it's wonderful served as a sandwich filling on fresh, crusty bread, or try it over a bed of greens for an awesome salad.

Mediterranean Tuna Salad

1 (6-ounce) can tuna
1 (15-ounce) can artichoke hearts, drained and quartered
1/2 cup red peppers, seeded and chopped
3/4 cup greek olives, sliced
1/2 small red onion, minced
1/4 cup fresh flat-leaf or Italian parsley, minced
1/4 cup fresh basil, minced
2 cloves garlic, minced
1 teaspoon dry/fresh oregano
3 tablespoons fresh lemon juice
Fresh ground pepper to taste
  1. In a large bowl combine tuna, red onion, parsley, greek olives, artichoke hearts, fresh basil, garlic, salt and pepper, and squeeze with fresh lemon juice.
  2. Mix and serve.

Makes 4 to 6 servings.
