Alfredo sauce, a sauce
made simply with butter, freshly grated Parmesan cheese, heavy
cream, salt and freshly ground black pepper -- and nothing more.
This versatile sauce can be used as a base for making all types
of delicious entrees or side dishes. Combine it with your favorite
pasta for a meatless entree, or embellish with cooked seafood,
chicken or turkey...or even use it for pizza sauce in place of
the traditional tomato pizza sauce.

Alfredo
Sauce
- 1/2 cup butter (no substitutes!)
- 2 cups heavy whipping
cream
- 1 cup freshly grated Parmesan
cheese*
- 1 teaspoon kosher or sea
salt, or to taste
- 1/4 teaspoon freshly ground
black pepper, or to taste
- Additional freshly grated
Parmesan cheese for sprinkling
- Melt butter in medium
saucepan; add cream, salt and pepper. Bring to a boil and simmer uncovered, stirring
occasionally, for a few minutes to reduce and thicken sauce.
- Remove from heat
and stir in 1 cup Parmesan
until melted and smooth.
Makes 6 servings or about
2 cups.
*Cook's Note: The success
of this sauce depends entirely on the use of freshly grated Parmesan
cheese. Do not use the canned variety as it will not melt properly,
and more importantly...it will not taste as good.
Tip: Should you have leftover
sauce and it "breaks" (separates) when reheated, simply
stir in a small amount of cream (a tablespoon or so) to bring
it back "together".
