Raita is a yogurt salad popular in Indian cuisine. Designed to be a a cooling counter-balance for many spicy Indian dishes, like Pork Balls in Curry Sauce or Bombay Pork Skillet. Reduce the calories by using lowfat or nonfat plain yogurt.

Corn & Cumin Raita

1 cup fresh corn niblets, cooked crisp-tender and drained*
2 teaspoons cumin seed
1 small tomato, chopped
1 (8-ounce) carton plain yogurt
1 teaspoon ground black pepper
1/2 teaspoon ground coriander
3 tablespoons chopped fresh cilantro
  1. In a small saute pan, toast cumin seed over high heat, stirring constantly; remove from heat, allow to cool slightly, crush and place in a small bowl.
  2. Stir in corn and rest of ingredients until well blended and serve.

Makes about 1 1/2 cups.

*1 cup canned corn niblets, drained or 1 cup frozen corn niblets, thawed and drained can be substituted.
