A delicious pasta meal has never been easier
thanks to the convenience of frozen prepared foods.
Fettuccine
Salmon Alfredo
- 2 packages shiitake mushrooms,
stems removed and sliced
1 to 2 tablespoons capers
1 teaspoon olive oil
3/4 teaspoon pepper - divided use
2 (10-ounce) packages frozen fettucini Alfredo
4 (4-ounce) salmon fillets
1/4 teaspoon salt
- Saute mushrooms and capers
in hot oil in a large heavy skillet over medium-high heat until
mushrooms are tender. Stir in 1/2 teaspoon pepper. Remove from
heat, and set aside.
- Cook fettuccine alfredo
sauce in microwave at MEDIUM (50% power) 1 minute. Add pasta,
and microwave 8 to 9 more minutes. Add to mushroom mixture, and
toss. Keep warm.
- Sprinkle salmon evenly
with remaining 1/4 teaspoon pepper and salt.
- Grill salmon, covered
with grill lid, over medium-high heat (350° to 400°F
/ 175°C to 205°C) 4 to 5 minutes on each side. Serve
over fettuccine mixture.
