Mild, white fish fillets are braised in an Italian-seasoned tomato sauce with white wine and black olives. Serve with a sprinkling of Parmesan cheese, if desired.

Italian-Style Fish Fillets

2 tablespoons olive oil
1 small onion, sliced
2 cloves garlic, finely minced
1 (14 1/2-ounce) can ready-cut tomatoes with juice
1 (2-ounce) can sliced olives, drained
1 tablespoon minced fresh flat-leaf parsley
1/2 cup dry white wine
1 pound fresh haddock or cod fillets
  1. In a large frying pan, heat oil over medium heat. Saute onions and garlic in olive oil until softened. Stir in tomatoes, olives, parsley, and wine. Simmer for 5 minutes.
  2. Place fillets in sauce. Simmer for about 5 more minutes, or until fish turns white and flakes easily.

Makes 4 servings.
