Grilling a whole fish like red snapper
or sea bass is festive and keeps the fish really moist.
Whole Grilled
Sea Bass
- 2 whole sea bass, cleaned
and scaled
2 lemons, zest, juice and sliced
1 tablespoon fresh oregano, chopped
2 large oregano sprigs
1 teaspoon ground coriander
1/4 teaspoon ground black pepper
3 tablespoons olive oil
- Heat grill to medium heat.
- In a small bowl combine
olive oil, chopped oregano, zest from 1 lemon and the juice from
1/2 a lemon, ground coriander, and salt then mix.
- With kitchen shears cut
away all the fins on the top, bottom and sides. Then cut 3 diagonal
slashes on both sides and season with salt and pepper.
- Place lemon slices and
oregano sprigs inside the fish cavity and then place in a baking
dish.
- Coat the fish with the
marinate and let stand for 15 minutes.
- Coat the grill with olive
oil to make sure the fish doesn't stick to the grill.
- Place on grill for 12
to 14 minutes or until opaque.
- Serve with olive oil and
lemon wedges.
Makes 4 to 6 servings.
