Leftover rice from a meal?
Give it a twist with this Almond-infused recipe. Serve along
side of Cerdo
con Frutas (Pork Chops with Fruit) or under Simple
Pork Stir Fry.
Almond
Rice
- 1 tablespoon olive oil
1/2 cup slivered almonds
1 tablespoon almond liqueur
3 cups cooked rice*
1/4 cup green onions, minced
- Heat oil in skillet; add
almonds and saute just until golden. Add liqueur and rice to
skillet. Stir until heated. Add onions; stir to mix well.
Makes 6 servings.
*According to the USA Rice
Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid
for 18 to 20 minutes will yield approximately 3 to 4 cups cooked
rice.
