
This rich and creamy, cheesy
potato side dish is simply bursting with flavor. It's a definite
crowd-pleaser and sure to become a family favorite.
Cheddar
Smashed Potatoes
- 5 pounds red potatoes,
washed and quartered
1/4 cup butter, softened
2 cups half-and-half
1 cup (4 ounces) shredded cheddar cheese
1/2 cup sour cream
1 bunch green onions, sliced thin
Salt and pepper to taste
- Place potatoes in a large
pot, cover with water, bring to a simmer and cook until fork
tender. Drain potatoes well and return to pot off of heat. Using
a handheld masher, add butter and mix until melted. Mash in remaining
ingredients and season with salt and pepper.
Makes 10 to 12 servings.
