This simple yet sophisticated
dish makes a perfect complement to a meal, or can star as part
of a Mediterranean appetizer table, accompanied with chunks of
salty feta cheese, cured olives, roasted red peppers, and crusty
bread.
Grilled
Zucchini
- 1 pound zucchini
2 tablespoons olive oil
1 teaspoon oregano
Ground black pepper to taste
2 tablespoons lime juice
Salt to taste
- Slice zucchini in half
lengthwise; rub with olive oil, sprinkle with oregano and pepper.
- Grill directly over medium
hot coals, cut side down, until well browned.
- To serve, sprinkle with
lime juice and season with salt.
