Turkey and vegetable stew using smoked turkey, or a great use for leftover turkey.

Hearty Harvest Turkey Stew

3 cups Honeysuckle White Smoked Turkey Breast, cubed, cooked (can use leftover turkey )
1 large zucchini squash
1 medium green pepper
1 large onion
4 medium potatoes
1/4 cup olive oil
1 (8-ounce) can of tomatoes
1 teaspoon salt
1/2 teaspoon pepper
1 cup frozen peas
  1. Cut up all vegetables.
  2. Put oil in large pot and heat. Add the cut-up fresh vegetables and keep stirring for 5 minutes. Put in tomatoes and enough water to cover. Add salt and pepper. Cover and let cook slowly until veggies are cooked (approximately 45 minutes); turn contents occasionally.
  3. Drain peas and add just before stew is done. Add the cubed cooked turkey and warm through.
