A hearty and satisfying cabbage, potato and kielbasa sausage chowder with sharp cheddar cheese.

Irish Kielbasa Chowder

1 pound kielbasa, sliced 1/8-inch thick
1 medium onion, chopped
4 russet potatoes, peeled and chopped
2 cups water,
Salt and pepper to taste
1 small cabbage, shredded
1 tablespoon all-purpose flour
3 cups milk
1 cup sharp cheddar cheese, shredded
  1. Place the first four ingredients in a large cooking pot and bring to a boil; reduce heat and simmer for for 20 minutes.
  2. Add cabbage and cook for 10 minutes or until tender.
  3. Whisk the flour and milk together and add to to soup; simmer for 10 minutes, stirring often.
  4. Add cheese and cook, stirring until cheese is melted and soup is heated through.

Makes 4 servings.
