Partially toasted bread triangles are topped with a bacon and olive mixture and broiled to perfecton.

Bacon-Olive Hot Appetizer

6 strips of bacon
1/2 cup chopped black olives
1/2 cup chopped green olives
1 1/2 cups shredded cheddar cheese
1 teaspoon curry powder
1/2 cup mayonnaise
1/2 pound loaf of white bread
  1. Preheat the broiler.
  2. In a saucepan, cook strips of bacon until crisp. Cool.
  3. Crumble bacon into a mixing bowl. Add chopped black olives, chopped green olives, grated cheddar cheese, curry, and mayonnaise and mix well.
  4. Cut loaf of white bread into shapes, easiest is to trim crust and cut diagonally in both directions to yield 4 triangles per slice of bread. Toast one side of each bread shape under a broiler.
  5. Spread the mixture on the untoasted side. Broil 4-inch from heat until lightly browned, 2 to 4 minutes.

Makes 32 appetizers.
