'Little bites' redolent of Mediterranean flavors become an easy favorite for hot appetizers. North Beach is the renowned San Francisco Italian neighborhood.

North Beach Pork Bocconcini

2 pounds boneless pork loin, cut into 3/4-inch cubes
3/4 cup cider vinegar
3/4 cup olive oil
4 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon oregano
1 teaspoon thyme
2 garlic cloves, minced
2 teaspoons black pepper
1 teaspoon salt
1/2 teaspoon cayenne
  1. Place all ingredients in a 1-gallon self-sealing plastic bag, mix well. Seal bag and marinate in the refrigerator 8 to 12 hours or overnight.
  2. Heat oven to 350°F (175°C).
  3. Remove pork cubes from marinade, discarding marinade. Pat pork dry with paper toweling; place cubes in a single layer, not touching, in a shallow baking pan and bake at 350°F (175°C) for 25 to 30 minutes, until pork is just tender and lightly browned.
  4. Remove to serving platter or chafing dish and serve hot.
