Tasty little puff pastry packets filled with a mixture of cooked ground turkey, mushrooms, onion and crunchy pistachios.

Pistachio Party Bites

12 ounces ground turkey, uncooked
1 cup chopped mushrooms
1/2 cup chopped onions
1 tablespoon vegetable oil
1/3 cup chopped shelled pistachios
1/2 teaspoon crushed dried oregano
1/4 teaspoon salt
1/4 teaspoon black ground pepper
1 (17.25-ounce) package frozen puff pastry, thawed
1 large egg yolk
  1. Sauté turkey, mushrooms and onion in oil until turkey is cooked and onion is tender; breaking turkey into small pieces. Add pistachios, oregano, salt and pepper; mix well.
  2. Roll each sheet of pastry to 16 X 12-inches; cut into 12 squares (4 X 4-inches each). Place about 1 rounded tablespoon filling on one side of pastry square; moisten edges with water. Fold in half to enclose filling; press firmly with fork to seal. Place on baking sheet.
  3. Beat egg yolk and water together; brush over pastries.
  4. Bake at 400°F (205°C) for 20 to 25 minutes or until golden. Serve hot.

Makes 24 pieces.

Variation: 12 ounces pork sausage can be substituted for turkey. Omit oil, salt and pepper; omit oregano if desired.

Cooking Tip: Pastries can be prepared ahead to the point of baking and refrigerated for up to 24 hours.
