Serve these crispy baked spinach balls
with mustard or a honey mustard dip.
Spinach Balls
- 2 (10-ounce each) packages of chopped
spinach, thawed and squeezed dry
1 (6-ounce) package stuffing mix
1 cup freshly grated Parmesan cheese
Pinch ground nutmeg
6 large eggs, beaten
1/3 cup melted butter
- Combine all of the ingredients, mixing
well.
- Form golf-sized balls out of the mixture.
- Place on a lightly greased baking sheet
and bake for 12 to 15 minutes at 350°F (175°C).
- Serve with a mustard or honey mustard
dip.
Makes about 24 appetizers.
