They look like brownies but have a delightful minty flavor. Heavenly with a scoop of vanilla ice cream!

Double Chocolate Mint Bars

1 3/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened baking cocoa
1/3 cup firmly packed brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter, chilled
3 large eggs
1/2 teaspoon mint extract, divided use
1/2 cup butter
2 cups semisweet chocolate chips
1 (14-ounce) can sweetened condensed milk
  1. Preheat oven to 375º F (175º C). Grease a 13 x 9-inch baking dish; set aside.
  2. In a bowl combine flour, sugar, cocoa, brown sugar, baking powder and salt. Cut in first addition of butter until mixture resembles coarse crumbs.
  3. Beat in eggs and half of the mint extract. Spread batter in prepared baking pan and bake until center is set, 20 to 25 minutes.
  4. Meanwhile, in a small saucepan, melt remaining butter with chocolate chips. Stir in condensed milk and remaining mint extract. Pour over baked layer and let stand until set, at least 2 hours.

Makes 16 bars.
