They look like brownies
but have a delightful minty flavor. Heavenly with a scoop of
vanilla ice cream!

Chocolate Mint Bars
- 1 3/4 cups all-purpose
flour
1 cup granulated sugar
1/2 cup unsweetened baking cocoa
1/3 cup firmly packed brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter, chilled
3 large eggs
1/2 teaspoon mint extract - divided use
1/2 cup butter
2 cups semisweet chocolate chips
1 (14-ounce) can sweetened condensed milk
- Preheat oven to 375º
F (175º C). Grease a 13 x 9-inch baking dish; set aside.
- In a bowl combine flour,
sugar, cocoa, brown sugar, baking powder and salt. Cut in first
addition of butter until mixture resembles coarse crumbs.
- Beat in eggs and half
of the mint extract. Spread batter in prepared baking pan and
bake until center is set, 20 to 25 minutes.
- Meanwhile, in a small
saucepan, melt remaining butter with chocolate chips. Stir in
condensed milk and remaining mint extract. Pour over baked layer
and let stand until set, at least 2 hours.
Makes 16 bars.
