Oat Toffee Bars
- 1 cup butter, softened
1 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/3 cup toffee chips - divided use
3 cups quick or old fashioned oats
- Heat oven to 350°F (175°C). Grease 13 x 9 x 2-inch baking pan; set aside.
- Beat butter and brown sugar in large bowl until well blended. Add eggs and vanilla; beat well.
- Stir together flour, baking soda, cinnamon and salt. Gradually add to butter mixture, beating until blended.
- Set aside 1/2 cup toffee chips. Stir remaining chips and oats into batter (batter will be stiff).
- Spread batter into prepared pan; sprinkle reserved 1/2 cup chips over surface.
- Bake 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars.
Makes 36 bars.
