Oat-laden cookie bars studded inside and on top with toffee chips.

Oat Toffee Bars

1 cup butter, softened
1 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/3 cup toffee chips - divided use
3 cups quick or old fashioned oats
  1. Heat oven to 350°F (175°C). Grease 13 x 9 x 2-inch baking pan; set aside.
  2. Beat butter and brown sugar in large bowl until well blended. Add eggs and vanilla; beat well.
  3. Stir together flour, baking soda, cinnamon and salt. Gradually add to butter mixture, beating until blended.
  4. Set aside 1/2 cup toffee chips. Stir remaining chips and oats into batter (batter will be stiff).
  5. Spread batter into prepared pan; sprinkle reserved 1/2 cup chips over surface.
  6. Bake 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars.

Makes 36 bars.
