A cooked pineapple filling is sandwiched between two pastry layers.

Pineapple Squares

1 cup vegetable shortening
1 1/2 cups granulated sugar - divided use
2 large eggs
3 3/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 cup buttermilk
1 teaspoon vanilla extract
6 ounces pineapple chunks, crushed
4 tablespoons cornstarch
  1. Preheat oven to 350°F (175°C).
  2. Mix together shortening, 1/2 cup sugar, and eggs. Stir in flour, salt, baking soda, baking powder, buttermilk, and vanilla. Separate the dough in half.
  3. Roll out the first half and place on a greased baking sheet.
  4. In a saucepan, combine crushed pineapple chunks, 1 cup sugar,and cornstarch. Cook until thick, then spread on the first layer, and cover with the remaining rolled-out dough.
  5. Bake for 20 minutes, or until browned.

Makes 20 squares.
