A good basic recipe for chocolatey chocolate chip cookie bars...they're so much easier than baking a batch of cookies when you're pressed for time.

Rich Chewy Chocolate Pan Cookies

1 1/4 cups butter, softened
2 cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semisweet chocolate chips
  1. Heat oven to 350°F (175°C). Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.
  2. Beat butter and sugar in large bowl until light and fluffy. Add eggs and vanilla; beat well.
  3. Stir together flour, cocoa, baking soda and salt; gradually blend into butter mixture. Stir in chocolate chips and spread in prepared pan.
  4. Bake 20 minutes or until wooden pick inserted in center comes out clean. Cool completely; cut into bars.

Makes 48 bars.
