Rich, chewy blondies studded with sweet peanut butter chips and topped with a decorative drizzle of melted peanut butter chips.

Rich Peanut Butter Chip Blondies

1 1/2 cups light brown sugar, packed
1 cup butter, melted
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 (11-ounce) package peanut butter chips - divided use
1/4 teaspoon vegetable shortening
  1. Heat oven to 350°F (175°C). Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan; set aside.
  2. In a large bowl, stir together brown sugar, butter and sugar; beat in eggs and vanilla until well mixed. Add flour and salt, stirring just until blended.
  3. Stir in 1 1/2 cups chips; spread batter in prepared pan.
  4. Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean.
  5. Place remaining 1/4 cup chips and shortening in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds; stir until chips are melted and mixture is smooth. Drizzle over bars.
  6. Cool completely; cut into bars.

Makes 48 bars.
