A refreshing, creamy blend of milk, pineapple juice and peppermint extract folded into sweetened whipped cream. Serve in stemmed glasses with a garnish of fresh mint leaves.

Pineapple Mint Refresher

1/4 cup whipping cream
2 tablespoons granulated sugar
1/2 teaspoon lemon juice
Dash of salt
Peppermint extract
1 1/2 cups cold milk
1 1/2 cups chilled pineapple juice
Fresh mint leaves for garnish (optional)
  1. Whip cream; add sugar, salt and lemon juice.
  2. Blend together milk, pineapple juice; add peppermint extract to taste and fold into whipped cream mixture.
  3. Serve immediately with a garnish of mint leaves, if using.

Makes 4 servings.
