Apple Fritters

2 cups all-purpose flour
1 tablespoon granulated sugar
1 tablespoon baking powder
1 teaspoon salt
2 large eggs, slightly beaten
2/3 cup milk
2 tablespoons vegetable oil
2 cups diced tart apples
Vegetable oil for frying
Cinnamon-Sugar for rolling
  1. In medium bowl combine flour, sugar, baking powder and salt; set aside.
  2. In mixing bowl combine eggs, milk and oil; mixing well. Stir in flour mixture until just mixed. Fold in apples.
  3. Drop dough by tablespoonfuls into hot oil at 375*F (190*C). Fry until golden brown on both sides, about 2 to 3 minutes. Drain on paper towels. Roll in cinnamon/sugar, if desired. Serve warm.

Makes about 16 to 20 fritters.
