Apple Fritters
- 2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 large eggs, slightly beaten
- 2/3 cup milk
- 2 tablespoons vegetable oil
- 2 cups diced tart apples
- Vegetable oil for frying
- Cinnamon-Sugar for rolling
- In medium bowl combine flour, sugar, baking powder and salt; set aside.
- In mixing bowl combine eggs, milk and oil; mixing well. Stir in flour mixture until just mixed. Fold in apples.
- Drop dough by tablespoonfuls into hot oil at 375*F (190*C). Fry until golden brown on both sides, about 2 to 3 minutes. Drain on paper towels. Roll in cinnamon/sugar, if desired. Serve warm.
Makes about 16 to 20 fritters.
