Easy Bran Muffins

3 cups shredded wheat cereal, crushed
1 cup raisins
1 cup boiling water
2 1/3 cups all-purpose flour
1 1/2 cups granulated sugar
2 1/2 teaspoons baking soda
1/2 teaspoon salt
2 cups buttermilk
1/2 cup vegetable oil
2 large eggs
1 cup chopped pecans
  1. In a bowl, combine crushed shredded wheat cereal, raisins, boiling water; mix well.
  2. In another bowl, combine flour, sugar, baking soda, and salt. Make a well in the center and add buttermilk, oil, eggs, chopped pecans, and the cereal mixture; stir just enough to moisten.
  3. Spoon the batter into greased muffin tins, filling two-thirds full.
  4. Bake at 400*F for 15 to 18 minutes.

Makes 2 dozen muffins.
