Easy banana muffins with peanut butter chips and glazed with a vanilla icing.

Glazed P. B. Chip & Banana Muffins

Muffins:
2 cups all-purpose biscuit baking mix
1/4 cup granulated sugar
2 tablespoons butter, softened
1 large egg, slightly beaten
1 cup mashed very ripe banana (2 to 3 medium)
1 cup peanut butter chips

Glaze:
1 1/2 cups powdered sugar
2 tablespoons water
1/4 teaspoon vanilla
  1. Heat oven to 375°F (190°C). Grease 12 medium muffin cups.
  2. With wooden spoon, stir together the baking mix, sugar, butter and egg in a medium bowl until well blended.
  3. Stir in banana and peanut butter chips.
  4. Fill muffin cups 2/3 full with batter.
  5. Bake 18 to 20 minutes or until golden brown.
  6. Prepare Glaze: Stir together powdered sugar, water and vanilla in small bowl until smooth. Add additional water, 1/2 teaspoon at a time, for thinner consistency.
  7. Remove muffins from pan while still hot and immediately dip tops of warm muffins into glaze. Serve warm.

Makes about 4 dozen small muffins.
