Cheese and Raisin Latkes

2 large eggs, separated
1/4 cup water
2 tablespoons granulated sugar
1 teaspoon salt
2 cups small-curd cottage cheese
3/4 cup all-purpose flour
1/2 cup raisins
Vegetable oil
  1. Combine egg yolks, water, sugar, and salt in a medium bowl; beat with a wire whisk until blended. Stir in cottage cheese. Add flour and raisins; stir well.
  2. Beat egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into cheese mixture.
  3. Pour oil to depth of 1/8-inch into a large heavy skillet. For each latke, drop 1/4 cup mixture into hot oil. Fry until golden, turning once. Drain. Serve warm.

Makes 14 servings.
