Crispy fried sweet fritters laced with
huckleberries and sprinkled with powdered sugar.
Huckleberry Fritters
- 1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 tablespoon baking powder
- Pinch of salt
3/4 cup fresh huckleberries
1 large egg, beaten
1 cup milk
- Powdered sugar for sprinkling
- Sift together dry ingredients; add berries.
- Mix egg and milk and add to dry mixture
Mix just until moistened
- Drop batter by tablespoonfuls into deep
hot oil (375°F
/ 190°C). Fry until golden brown,
3 to 4 minutes turning once. Drain
on paper towels.
- Sprinkle with powdered sugar and serve
warm.
Makes about 2 dozen.
