Awesome Carrot Cake

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 teaspoons ground cinnamon
1 1/4 teaspoons baking soda
3 large eggs
3/4 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrot
1 1/2 cups white chocolate chips
1/2 cup chopped pecans or walnuts
 
Cream Cheese Frosting:
2 (3-ounce) packages cream cheese, softened
1/2 cup butter, softened
4 cups powdered sugar
2 teaspoons vanilla extract
  1. Heat oven to 350°F (175°C). Grease and flour two 8-inch round baking pans.
  2. In a medium bowl, mix together flour, granulated sugar, brown sugar, cinnamon and baking soda; set aside.
  3. In a large bowl, beat eggs, oil and vanilla.
  4. Add flour mixture to egg mixture and mix well. Stir in carrot, white chocolate chips and pecans. Pour into prepared pans.
  5. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire rack. Cool completely.
  6. For Cream Cheese Frosting: In a large mixing bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until smooth.
  7. Frost cake. Store cake in refrigerator.

Makes 10 to 12 servings.
