Easy One-Bowl Cocoa Cupcakes

3 cups all-purpose flour
2 cups granulated sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons white vinegar
2 teaspoons vanilla extract
Powdered sugar for sprinkling
  1. Heat oven to 350°F (175°C). Line 2 medium-sized muffin pans with paper baking cups.
  2. In a large bowl, combine flour, sugar, cocoa, baking soda, salt, water, oil, vinegar and vanilla and beat with electric mixer on medium speed until thoroughly blended.
  3. Fill prepared muffin cups 3/4 full with batter.
  4. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.
  5. Sprinkle with powdered sugar or frost as desired.

Makes 2 dozen cupcakes.
