Using just one bowl to
mix up the batter for these yummy chocolate cupcakes is almost
as easy as using a cake mix...but they are so much better than
a store-bought mix!
Easy
One-Bowl Cocoa Cupcakes
- 3 cups all-purpose flour
2 cups granulated sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons white vinegar
2 teaspoons vanilla extract
Powdered sugar for sprinkling
- Heat oven to 350°F
(175°C). Line 2
medium-sized muffin pans with paper baking cups.
- In a large bowl, combine
flour, sugar, cocoa, baking soda, salt, water, oil, vinegar and
vanilla and beat with electric mixer on medium speed until thoroughly
blended.
- Fill prepared muffin cups
3/4 full with batter.
- Bake 20 to 25 minutes
or until wooden pick inserted in center comes out clean. Cool
completely in pan on wire rack.
- Sprinkle with powdered
sugar or frost as desired.
Makes 2 dozen cupcakes.
