Chocolate cupcakes with
yummy coconut cream cheese centers.

Chocolate Cupcakes
- Cupcakes:
- 1 1/4 cups all-purpose
flour
1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
3/4 cup water
1/2 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
Surprise Filling:
- 1 (8-ounce) package softened
cream cheese
- 1/3 cup granulated sugar
- 1 large egg
- 1/2 cup sweetened flaked
coconut
- Heat oven to 350°F
(175°C). Line medium muffin pans with paper baking cups.
- In a medium bowl, combine
flour, sugar, cocoa, baking soda, water, oil, egg and beat until
smooth.
- Fill muffin cups 2/3 full
with batter.
- For Surprise Filling:
In a medium bowl, beat cream cheese, sugar and egg until blended;
stir in coconut.
- Spoon about 1 tablepoon
filling onto top of batter in each cup.
- Bake 25 to 30 minutes
or until wooden pick inserted in center comes out clean. Remove
from pans to wire rack; cool completely.
- Serve as is, or frost
as desired.
Makes about 1 1/2 dozen
