Chocolate cupcakes with yummy coconut cream cheese centers.

Surprise Chocolate Cupcakes

Cupcakes:
1 1/4 cups all-purpose flour
1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
3/4 cup water
1/2 cup vegetable oil
1 large egg
1 teaspoon vanilla extract

Surprise Filling:
1 (8-ounce) package softened cream cheese
1/3 cup granulated sugar
1 large egg
1/2 cup sweetened flaked coconut
  1. Heat oven to 350°F (175°C). Line medium muffin pans with paper baking cups.
  2. In a medium bowl, combine flour, sugar, cocoa, baking soda, water, oil, egg and beat until smooth.
  3. Fill muffin cups 2/3 full with batter.
  4. For Surprise Filling: In a medium bowl, beat cream cheese, sugar and egg until blended; stir in coconut.
  5. Spoon about 1 tablepoon filling onto top of batter in each cup.
  6. Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Remove from pans to wire rack; cool completely.
  7. Serve as is, or frost as desired.

Makes about 1 1/2 dozen cupcakes.
