Microwave Peanut Brittle

1 cup granulated sugar
1/2 cup white corn syrup
1 cup roasted, salted peanuts
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda
  1. Lightly grease a baking sheet with butter.
  2. Place sugar and corn syrup in a large microwave-safe bowl; mix and microwave on HIGH (100%) for 4 minutes.
  3. Add peanuts and return to microwave oven for another 4 minutes on HIGH (100%).
  4. Add butter and vanilla to syrup and blend, returning to microwave oven for 1 to 2 minutes more.
  5. Carefully add baking soda. Stir gently until fluffy and foamy.
  6. Pour onto prepared baking sheet.
  7. Cool completely (about 1 hour).
  8. Break into small pieces. Store in an airtight container.

Makes 1 pound.
