Microwave Peanut Brittle

1 cup granulated sugar
1/2 cup white corn syrup
1 cup salted roasted peanuts
1 teaspoon butter or margarine
1 teaspoon vanilla extract
1 teaspoon baking soda
  1. Grease a baking sheet and set aside.
  2. Mix sugar and corn syrup in microwave-casserole dish. Microwave for 4 minutes on high. Add peanuts, mixing well and microwave another 4 minutes on high. Stir in butter and vanilla; microwave for 2 minutes on high. Remove from microwave oven and stir in baking soda.
  3. Immediately pour onto prepared baking sheet, spreading thinly. Cool. Break into bite-size pieces.

Makes about 1 1/2 pounds candy.

Note: Warming the baking sheet will help to spread candy out thinner.
