Try this convenient brittle recipe during the busy holiday times ahead -- buttery peanut flavor in a simple and fast treat.

Microwave Peanut Brittle

1 cup raw peanuts
1 cup granulated sugar
1/2 cup light corn syrup
1/8 teaspoon salt
1 teaspoon butter or margarine
1 teaspoon vanilla extract
1 teaspoon baking soda
  1. In a microwave-safe bowl, combine peanuts, sugar, syrup and salt. Microwave for 4 minutes on HIGH; stir well. Cook another 4 minutes.
  2. Add butter and vanilla, stirring to blend. Microwave on HIGH for 2 minutes. Add baking soda and gently stir until foamy. Pour onto a buttered foil-lined baking sheet. Let cool before breaking into pieces.

Makes 16 servings.
