Peanutty Rocky Road
- 1 (12-ounce) package semisweet chocolate chips (2 cups)
1 (6-ounce) package milk chocolate chips (1 cup)
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
2 teaspoons vanilla extract
Dash salt
1/2 cup chopped dry roasted peanuts
1 1/2 cups miniature marshmallows
- Line 8-inch square pan with foil, extending foil over edges of pan.
- In a large microwave-safe bowl, combine semisweet and milk chocolate chips and microwave at HIGH (100%) 1 1/2 minutes; stir. If necessary, microwave at HIGH an additional 30 seconds at a time, stirring each time, just until chips are melted when stirred.
- Stir in sweetened condensed milk, vanilla and salt; blend well.
- Fold in chopped peanuts and marshmallows.
- Spread mixture into prepared pan.
- Refrigerate until firm. Lift candy out of pan and peel off foil. Cut candy into squares.
Makes about 60 squares.
